Today begins one week of very low carbs before heading to Family Camp (where I will be gobbling all the Kathy foods I love without guilt). Yesterday I discovered unsweetened coconut milk has almost no carbs, so this morning my iced coffee is low carb and, I'm happy to report, still totally yummy!
